The new El Pollo Loco(The Crazy Chicken), located at 3808 Johnston, has a fair amount of their structure assembled and there is a now hiring sign out front.

Something interesting happened with this construction project that I have not witnessed from other sites. The builders started on the parking lot first, rather than the main structure. Maybe that’s nothing new, but I’ve seen plenty of construction project from start to finish and this was different.
I will say, I am a little bit excited to try them out—stone me ?.
