Caroline’s Cookies, a local online-based cookie startup is expanding into a physical store located in the former Southfin Restaurant at 1921 Kaliste Saloom Road in Parc Lafayette.
Founded by 19-year-old Caroline Merryman, the fast-growing cookie business started in the most wholesome of ways when Caroline was in middle school. She says that she would often bake cupcakes for her classmates and bring them to school. As time passed, she started baking cookies, which led to people asking to purchase orders of cookies from her. At that time, Caroline was not quite prepared sell cookies. However, her brother, Reece Merryman, helped to build her website, eatcarolinescookies.com, so that she would be able to sell more efficiently.
Today, her website hosts cookies of the month launch days with her cookies selling out within minutes after opening orders to the public.
So what is the deal with the cookies and why do that sell out so fast? Caroline’s Cookies are much thicker & gooey than what most cookie lovers are familiar with, plus the mix of creative cookie flavors & great marketing, it’s no wonder they are selling out.
“I’m super excited for the location and I think it’s going to make for an awesome experience,” says Merryman. “My brand will really be enhanced in this storefront!”
The new physical location will allow for Caroline’s Cookies to offer in-store pickup for call ahead orders as well as a true commercial kitchen space to produce larger batch orders for birthday parties & corporate orders. Caroline’s mother will be glad to have her home kitchen space back to herself.
“I’m most excited to be offering warm, oven-fresh cookies and milk for those who prefer to dine in!”
We asked why she chose this particular space to open a physical location, Caroline replied, “I loved the natural lighting inside my space and how well Parc Lafayette fit my brand. I think it will truly take my business to the next level!”
The tentative opening date is not yet set, but once remodeling nears completion, we should know more.
