Pop’s Poboys, located at 740 Jefferson Street opened quietly on Thursday for lunch, but with the power of word of mouth, they were swarmed and within two days were sold out! The response for this restaurant has been well received amongst Lafayette foodies. The restaurant is lead by Collin Cormier & Zach Doise who have a large culinary presence in Lafayette. And hey, it’s a local place! Pop’s posted on facebook that they will be back and with a festival menu this week, sounds good, right? For more info check out our previous post.
