Bistrology Brunch & Coffee, the Latin-fusion brunch concept taking over the former Chili’s at 3905 Ambassador Caffery Parkway, is nearing completion.
The Lafayette location is owned and operated by franchisee Ruben Chavez, who is bringing the concept to the market. This week, we were given an exclusive inside look at the space, showing that interior construction is now in its final stages. This space is really unique and honestly very cool for Lafayette.

As detailed in our initial post, Bistrology will offer a menu centered on Latin-inspired brunch plates, specialty coffees, and colorful, elevated presentations. Dishes include items like steak and eggs, breakfast arepas, waffles, chilaquiles, Benedict variations, and other brunch staples with a Latin influence. The coffee program features espresso-based drinks, cold brews, and specialty lattes.
Inside, the former Chili’s building has been fully remodeled. The layout now features a casual brunch environment with so much greenery that it would make our sponsor, The Apothecary Shoppe, blush. Complementing the lush green aesthetic are updated flooring, modern yet earthy lighting, and a dedicated bar for coffee and brunch beverages. The newly added patio also features a lush green vibe with lots of seating. To be honest, the outdoor space feels very much like the interior space.

Final preparations are underway. We will share any further updates as Bistrology approaches its early January 2026 opening.
Bistrology is also coming soon to Youngsville. Opening will soon follow Lafayette’s location.
