Bistrology, a Latin-owned brunch and coffee brand known for its vibrant plates and over-the-top coffee experiences, is coming soon to Lafayette in the former Chili’s building at 3905 Ambassador Caffery.
The former Chili’s space is undergoing extensive renovations to match the brand’s signature jungle-inspired aesthetic—including the addition of a spacious new open-air patio.

Originally founded in Miramar Beach, Florida, Bistrology is known for its bold, Latin-fusion menu, theatrical coffee service, and presentation. Its Lafayette location will be the brand’s third store and its first in Louisiana.
Bistrology’s menu features both classic and Latin-inspired options. Guests can choose from traditional plates, scrambles, omelets, pancakes, waffles, and French toast, along with heartier items like huevos rancheros, chilaquiles, and stuffed croissants. The drink menu features espresso-based coffees, Cuban and Mexican mochas, and specialty lattes, plus fresh juices, smoothies, Latin sodas, and milkshakes. Premium coffee beans are also available for purchase.
Guests can expect large portions, creative plating, and a premium casual experience. Pricing falls in the $12–$20 range for most entrées, with specialty coffees running up to $15.
According to their website, the company is also actively franchising, with additional locations planned across the Gulf Coast and beyond.
