Tge planned Insomnia Cookies, coming soon to 505 Jefferson Street in Downtown Lafayette, doesn’t look much different from the outside than it did when we first reported on the project earlier this year.

The “For Lease” sign is still in the window, and there has been little visible construction activity from the street. However, after taking a closer look through the front window during a recent visit, we spotted something interesting.
Near the entrance was an envelope addressed to Insomnia Cookies of Lafayette with the attention line reading Bakery Manager with a post marked date of April 30th of 2026. The writing on the envelope was barely readable, but a zoomed-in photo made the information visible.
The envelope, along with two active permits in Lafayette Consolidated Government’s permitting system, suggests the project is continuing. Those permits include one for the building’s interior construction/buildout and another for an illuminated wall sign. The most recent activity on both permits shows updates from February & March of this year.
At this point, there is still no opening timeline to report, and progress appears to be moving slower than originally expected. However, based on what we’ve seen, there is nothing to suggest the project has been abandoned.
We’ll continue keeping an eye on the location and will share another update as soon as more information becomes available.
For now… don’t sleep on this project. 🙃😂
